Preserving Enzymes

First, I want to apologize for the long gap between posts. Sometimes life just gets in the way, and then my internet speed slows down because my 15 gigs of data is used up before the month is over. So, thank you for your patience in waiting for this next segment. I’m trying to figure out how to manage my time (not my forteĀ“).

The first pineapple we cut up, we froze about half of it so it wouldn’t go bad before we could use it. When we got around to using the frozen pineapple, we noticed a big difference in how we felt. After reading about how to preserve the fruit, we discovered that it can NOT be frozen or dried. This will kill the enzymes. So how can it be preserved?

The only answer we could find was firmentation. I found a YouTube video on preserving fruit in raw honey. So we have been trying that. To be honest, we have not kept a pineapple over a week. Not that it went bad, but we have used it all. The real test will come when we buy several pineapples at one time.

On my next post I will talk about the benefits of Pineapple and Papaya. Please pray for us as we continue on this journey with cancer. I know that all things are in God’s hand and He has all the answers. Please pray that we stay open to His leading.

My husband wrote the above section about the pineapple. I want to add a note here that my battle with bloating, constipation, and gas is back. I watched a lengthy ad today on the internet about probiotics. Of course it was a sales pitch, but here is what I learned:

1) Our bodies need probiotics to combat all of the harmful stuff we ingest.

2) A good probiotic should have a large quantity of good bacteria and quality substrains of good bacteria, which should be listed next to the ingredients.

3) It should have adequate potentcy (CFU’s): minimum of 40-50 billion live cultures per serving.

4) The capsules should provide a protective delivery system, meaning a vegetable coating and resistent to stomach acid and bile so they will remain viable in the digestive tract.

5) 2 main strains of good bacteria are absolutely necessary: Bacillus Coagulans (B. Coagulans) and Lactobacillus Rhamnosus
